Striking a Balance

The Exchange is located within the award-winning Asia Square, in a modern 5,000 sq. foot brasserie.  Elaborately molded ceilings, Chesterfield sofas, and marble clad surfaces provide elements of old-world character while the stainless-steel framed windows of the kitchen brigade echo the mid-century facades in Soho, New York. 

Complimented by a modern, Australasian-inspired menu, this Tadcaster Hospitality concept is the perfect venue for any occasion - from grabbing a takeaway coffee from our coffee hatch or catching your favourite sports, to after-work drinks, power lunches and languorous dinner parties.

Kacey Whaitiri-Roberts

Group Executive Chef, Tadcaster Hospitality

Hailing from Hawkes Bay, New Zealand,  Kacey has worked at renown restaurants including Boulcott Street Bistro in Wellington, San Marco Restaurant in Singapore, and Gordon Ramsay at Claridge’s in London.

 He joined Tadcaster Hospitality in 2011 as the group executive chef and oversees the menus for all Tadcaster Hospitality outlets as well as kitchen development for new restaurants and projects.

Lai Ming Tat

Senior sous Chef, The Exchange

After moving to Singapore in 2004 from Ipoh, Malaysia, Ming Tat unexpectedly found himself in the F&B Industry as a kitchen helper. He quickly developed dedication and an immense passion for the process of making great food from scratch, often collecting fresh fish straight from the docks in the dead of night to ensure unrivalled quality.

Ming Tat has worked with Tadcaster's Group Executive Chef, Kacey Whaitiri-Roberts for over 8 years, and joined Tadcaster Hospitality in 2012 to open Cafe Melba before moving to The Exchange. 

Joan Elaine Chiang

Junior Sous Chef, The Exchange

Joan was born and raised in Malaysia and joined the Tadcaster Hospitality family as Junior Sous Chef at Cafe Melba back in 2012. Into 2014, she was offered the lead for Tadcaster's first venture in The Phillippines, The Social, and being half Filipina, was happy to spend some time in Cebu. 

After earning her accolades in Cebu, Joan moved back to Singapore in early 2015 to come aboard The Exchange's culinary team.

ADRIAN HOUGHTON

Originally from Liverpool, England, Adrian has been in Asia for more than 20 years. With experience ranging from owning bars to working his magic as a flair bartender, he certainly knows his way around the hospitality scene. 

He joined Tadcaster Hospitality in 2012 as the General Manager of The Exchange and was promoted to Operations Director of Tadcaster Hospitality in 2013.

MIKE MIDDLETON

General MANAGER, THE EXCHANGE

Born and bred in Melbourne, Australia, Mike started in the Hospitality industry when he was 17, and quickly rose through the ranks to find his calling in front-of-house management. 

After four years of working for Tadcaster Hospitality, Australia and building the successful reputation of two other Tadcaster venues, Mike was brought on to The Exchange's team in May 2014.

AMELIA MATHESON

RESTAURANT and Events MANAGER, THE EXCHANGE

Amelia began working in customer service at just 15 years old, and knows the ins and outs of what it takes to manage a successful brand from the kitchen to the floor. 

She has worked for Tadcaster Hospitality for four years, three of which were in her hometown of Ballarat, Australia at our other venues before moving to Singapore to manage The Exchange.
